Student's Written Response
MEMORANDUM TO: Maricopa County Health Inspector FROM: Marcus W., Shift Supervisor DATE: November 14, 2025 SUBJECT: Temperature Log Documentation — Corrective Response I am writing in response to your observation regarding the incomplete temperature log at Desert Sun Food Truck during today's inspection. The temperature log was last updated at 7:00 AM during opening prep. I acknowledge this was not updated at the required 2-hour intervals during service. Upon your notification, I immediately took and recorded all food temperatures. All products were within safe range. Corrective Action Taken: All temperature readings have been recorded and logged. All food products have been verified safe. Prevention Plan: I will set a phone reminder for every 2 hours to ensure temperature logs are completed without interruption during service. I take food safety compliance seriously and appreciate the opportunity to correct this oversight immediately. Respectfully, Marcus W. | Shift Supervisor | Desert Sun Food Truck
💭 Student Reflections
Q1: What safety standard was at risk and why does it matter?
FDA Food Code requires temperature logs at 2-hour intervals to identify temperature abuse before it causes illness. This matters because improper temperatures can allow bacteria like Salmonella to grow to dangerous levels without visible signs.
Q2: Describe what you would do differently next time.
I would set recurring alarms on my phone at the start of every shift to remind me to check and log temperatures. I would also brief all team members on the importance of this requirement during daily standup.
Q3: How does this connect to your career goals?
As someone who wants to open my own food truck business, understanding and following health code is not just a job requirement — it is my responsibility to my customers. A single food safety violation could end a business I worked years to build.
